Dinner that I made for my family! Recipe:
Romaine Lettuce
Canned Low-sodium chicken
Veganaise
Avocado
Cranberries
Almonds
Tomato
Curry
Pepper
Cranberry-pear balsamic vinegrette.

Mix the canned chicken in a bowl with veganaise and avocado.
Season it with whatever, I’ve found curry to be REALLY good in chicken salads! 
Cranberries and chopped almonds add an awesome crunch and taste, that go really well with the curry!
I had a vinaigrette that added a really nice flavor, but normal balsamic would probably taste good too.

Top it with whatever you want. Tomatoes, more avocado, and enjoy! :)

Made my own granola today!
I’m going camping, and decided I wanted to create something grab able yet healthy to go for instead of the junk food that comes with camping trips!

I just put all the ingredients into a ziplock back and shook it!
Raw Hazelnuts
Rasins/Cranberries
Pistachios
Pumpkin seeds
Almonds
An amazing Gluten-free cinnamon granola mix
And some DARK chocolate chips.

Probably the yummiest snack ever. And you can customize it with whatever looks good to you!


I’m so proud of the dinner I made lat night hahah!
My grandma grows they Patty Pan Squash in her harder, and gave them to my family. We had no idea what to do with them, so I looked them up for recipes, and constructed these with a general idea of what I wanted!

First, preheat the oven to 350`F, and start cooking a cup of Quinoa in 2 Cups water. (Or a broth, but I’m watching sodium)

Then, I cut the tops off of the squash and started to scoop out the insides. You have to be careful not to break through the skin (totally did that a few times) and save the insides for later in the recipe.

After that, start to brown your meat. I used turkey burger, and seasoned it with
Oregano
Italian seasoning
Garlic powder
Garlic salt
Start to also sauté your mushrooms in the same or different spices in some kind of oil- I used coconut oil.and don’t forget fresh basil!

Take the insides of the squash that you saved, and dice it up. Take half that amount and add it to the pan with the mushrooms before the mushrooms are cooked all the way through.
Sauté them together until they’re both almost done.
Add about a handful of spinach, and soften the leaves up.
Note:they will continue to soften when you put the squash in the oven.

By now, your quinoa should be done cooking (depending on your instructions).

In a separate bowl, or a pan that is big enough for everything, combine all the ingredients.
I added everything in proportionate amounts, but ended up putting everything I had in the mixture.
You can do however much of each thing you want, though.

Now, get to stuffing your squash!

Cover the pan with foil and Place the squash in the oven for 30 minutes.

You can top them with cheese, or not!

And enjoy! :)


I truly think I have an addiction to Nut Butters (almond and peanut. I’m sure I would be addicted to cashew and coconut butters if I let myself try those!)
Especially on bananas.

It was my first Coconut experience! And I wanted to share it with you as I was learning with trial and error.

So apparently coconuts have one “eye” that is the softer of the 3, and this is where you puncture it to get the coconut water out.

I then put it in the oven at 400`F for 30 minutes until it cracks.
Once it cracked, we pulled it out of the oven and tried to break it open(took a lot of work, but I got it!)

That’s where you can see the yummy white flesh that I was dying to eat!

It is supposed to separate from the shell,but we had a hard time getting it to part!
It came off with a thinner layer of brown that was still edible, but you can peel it off with a potato peeler.

One of the best things I’ve ever had! I just went out and bought two more. Can’t wait to get Crackin’! :)


I made this yummy summer dish that my family loves for the first time since last summer. I forgot how much I loved this!
It was from the ShayTards(a family on YouTube. Check them out of you haven’t heard of them)
Shay lost a TON of weight, and they did something called Meatless Mondays, and this is a dish they made.
I tried my best to document it, but I missed the beginning!

It has:
1/2 Onion
1 Bell Pepper
Cilantro
1 can Black Beans
1 can Corn (I like corn and beans so I did 2 cans of both!)
2 Tomatoes
1/2 Jalapeño
4-5 cloves Garlic
2C Quinoa
-and the dressing-
Lime juice
Olive oil
Cumin
A tiny bit of salt

Everything is so fresh, light, and perfect for summer!
You scan eat it on a tortilla,chips, or on its own!

We also do it without measuring to make it just how we like it. Have fun with it! :)
